Glucono-δ-lactone (GDL) is a food additive and organic compound with the formula C6H10O6. It is a white crystalline powder that dissolves in water, slowly hydrolyzing to form gluconic acid. Widely used as a coagulant in tofu production, it promotes gentle curdling of soy milk. In baking, it acts as a leavening agent by reacting with baking soda to release CO2. Additionally, GDL functions as a preservative, acidifier, and sequestrant in processed foods. It is non-toxic, biodegradable, and commonly derived from glucose fermentation. Its slow acid-release property makes it ideal for controlled pH adjustment in various culinary and industrial applications.
